I wanted to make pie. Apple pie. And I wanted said pie to look super cute and be handy to eat. Eureka!
I'll make mini apple pies!
And they'll just be the cutest, most delicious mini-pies ever!
And it won't be hard at all, because apple pie is an american classic, and no classic can be that difficult, right?
Hurumph...how wrong I was....
The final result was great, but the road to pretty mini-pies is always under construction-at least in my kitchen.
I must let you know, this was not only my first attempt at mini-pies, but my first attempt at homemade pie in general. (Though frozen pies and I go waaay back, it really had no bearing on this endeavor here)
So, I did some research. After much trolling of the internet, I combined the following 3 recipes/methods to create these works of art (or so I hoped they would be):

I stumbled upon the recipe for this cake just in time to make it for BF's latest visit.

I had to use a regular bunt pan, and I switched out the pecans for hazelnuts. I put the topping in the bottom and hoped for the best. While the cake was moist and delicious, the topping (which was actually a bottoming) wasn't so stellar-it crumbled everywhere when sliced. Thank heaven for Confectioner's Sugar! If I made this again, I would either make sure to use a removable-bottom pan (like Vickie's super duper cute one), or just leave the topping out all together (maybe a nice glaze would work here).
